I have never thought of doing the stock in the crock pot but now I’m game. I’m also doing a freezer-pantry cleanse right now. I used to enjoy cooking but into my seventh decade, I avoid it like the plague yet I enjoy home cooked meals.
I also use my slow cooker for making stock, then I freeze it. I so enjoy the the overwhelming sense of virtue, then proceed to forget all about it until the next time I clean the freezer out.
I wasn't aware of Instant Pots so just had to google it. I must share that I recently cooked a whole chicken in the air fryer (Duel Ninja) and it was amazing! 60 mins done and no need to heat up the whole house in NZ summer with the oven. Rub the chicken in oil, a crushed stock cube and herbs and air fry for 30mins breast down then turn over and do another 30 mins.

Us too! Trying to get everything eaten in the house. I flip flop with cooking...sometimes love it to relax...other times it makes me seethe.

I actually do the same and sometimes I do it in mason jars, and I forget to leave air pocket and it breaks... What is your freezing trick?
I freeze it too, but I use the plastic containers that takeaways like currys and soups come in.

I love doing this with leftovers from a roast, so yummy! Sometimes I'll fill it up all the way with water, makes a great broth 😋
What leftovers are we talking about? Bone? Meat?
Both, the carcass of the chicken and any leftover meat and veges.

Pro tip, chuck in all the veges from the fridge you don't want to eat but can't yet chuck out.
